Keto Chocolate Dirt Cups!


For anyone with a ‘Big Sweet Tooth’ chocolate dessert usually means a slippery slope. Well, not today! At only 1g net carb you’d be tempted to whip this 5-ingredient dessert after every dinner. Enjoy


Ingredients

For the Pudding

  • 1 1/2 cups Unsweetened Almond Milk
  • 5 tablespoons Chia Seeds
  • 1 teaspoon Vanilla Extract
  • 3 tablespoons Powdered Erythritol, or sweetener of choice
  • 2 teaspoons Unsweetened Cocoa Powder

For the Cream

  • 2 cups Heavy Whipping Cream
  • 7 tablespoons Powdered Erythritol, or sweetener of choice 

For the "dirt" topping

Other Supplies:

  • 8 small clear drink/dessert cups, 9oz size
  • 1 large plastic bag or piping bag
  • Scissors
  • Sugar free gummies for decorating

Instructions

  1. Add almond milk, chia seeds, vanilla, cocoa powder, and sweetener to a large blender and turn on high for about 3-5 minutes or until the mixture thickens, stirring and scraping down the sides frequently. Refrigerate for 20 minutes to thicken completely.
  2. Make the dirt topping: add the cereal and cocoa powder  to a food processor and pulse until it's a fine crumb. Add the cold butter and pulse a few more times. Chill in refrigerator until ready to assemble. 
  3. Whipped Cream and Assembly: To keep your whipped cream nice and fluffy, prepare it right before serving! Beat the heavy whipping cream and sweetener until stiff peaks. Fold in the prepared chia pudding gently, then add the mixture to a plastic bag or pastry bag; alternately you can just use a spoon to create the layers. 
  4. Spoon or pipe a layer of pudding to the bottom of the plastic cup, followed by a layer of the dirt mixture, another pudding layer, then top with more dirt. The cups should be about 3/4ths full. Repeat with remaining cups.
  5. Top with optional sugar free worms. Best when enjoyed immediately!

    *If using the piping bag method, do not overfill the bag. Work in batches for easy piping!

    *Sugar free pudding may be used in place of the chia pudding if desired.
