Some of us are obsessed with peanut butter (so good!)... add in chocolate and it's hard to have just one bite. Well, here's one recipe to try anytime you're craving something smooth, creamy n' crunchy. Best part, there's zero need to worry about blowing up after this dessert - it's only 6g net carbs and chock-full of protein. Enjoy.

1- Make the chocolate mousse: Using a hand mixer or in a blender, beat the heavy cream and liquid stevia until it forms soft peaks, about 2 minutes. Add the cocoa powder and beat for an additional minute or until the mixture is light and airy. Gently fold in the 1 tablespoon peanut butter.
2- Assemble the parfait: Add the chocolate mousse to a piping bag and pipe a layer of mousse to the bottom of two serving dishes. Top generously with peanut butter and cocoa cereal, followed by the remaining mousse. Garnish with the rest of the cereal and optional drizzle of peanut butter.
3- Variation: Make 4 smaller servings by making only 1 layer of mousse and cereal! Try different additions like whipped cream or chopped nuts!
