Ingredients
- 8 tbsps unsalted Butter
- 3 Large Eggs
- 1 tsp Vanilla Extract
- 1/2 cup Unsweetened Cocoa Powder
- 2/3 cup granulated Erythritol, or sweetener of choice
- 1 tsp Xanthan Gum
- 1 pouch Cocoa Cereal
- 1 8oz package Cream Cheese
- 1 egg
- ¼ cup granulated Erythritol or sweetener of choice
- 1 tsp Vanilla Extract
Instructions
- Heat oven to 350 degrees and line a square pan with parchment.
- Use a hand mixer or wire whisk to beat the melted butter, vanilla extract, erythritol, and cocoa powder just until smooth.
- Beat in the eggs one at a time, then fold in the cereal. Spread into prepared pan.
- For the Cheesecake layer: Beat the cream cheese, egg, sweetener, and vanilla until smooth. Scoop the cream mixture over brownie batter and use a toothpick to swirl the flavors together.
- Bake for 20-25 minutes minutes, watching for the edges of the brownie to set and the center to be slightly soft. Remove from the oven and let cool completely before cutting into shapes! Can be stored in the refrigerator for 3-5 days.
